Mini S’mores on a Stick

My Baby Belle turns eight years old in just ten days from today. Wow.

She has been talking about having a family campout to celebrate. “Campout” as in we all pitch a tent in the backyard, and as soon as it gets dark, Mommy comes back inside and sleeps in my bed. You know. That kind of campout.

I have been trying to come up with a fun, campout-ish ‘treat’ for her, and today, I think I found something she’ll love–Mini S’mores on a Stick.

This is what I used:

  • flat, s’mores marshmallows
  • chocolate Candiquick melting candy
  • sucker sticks
  • graham crackers (whole and crushed)

I used a serrated knife to cut my graham crackers to fit the size of the marshmallows. Then I melted the Candiquick in the microwave according to the directions on the box and dipped the tip of my sucker stick in the melted chocolate before inserting it into the bottom of the marshmallow.

I put a dab of chocolate on either side of my marshmallow to secure the graham crackers in place. I then popped them into the refrigerator to harden enough so that I could maneuver them by the stick for dipping into the chocolate later. (If your Candiquick hardens before the s’mores are ready to come out of the fridge, you can always reheat it a bit.)

After they hardened, I dipped them into the chocolate Candiquick (holding the stick) and coated them thoroughly. (Be sure to let all the excess chocolate drip off!) I then laid them onto a pan covered with wax paper and sprinkled them with more crushed graham crackers. That’s it! I put them back into the fridge for about fifteen minutes to set up, and they were ready to go.

I had to sample them… purely for blogging purposes, and oh. my. SO GOOD. My sentiments could possibly be tainted by the fact that for the last two months, I have held myself to 1200 calories a day, and anything tastes heavenly. (Stupid stupid swimsuit weather!!!) But just take a look for yourself.

I wanted to be able to ‘display’ them somehow, so I found the oldest looking pot in my cabinet and pushed a piece of  floral styrofoam down inside. Then I just arranged my mini s’mores how I wanted.

This would look cute as a centerpiece. Or you could even bag them up individually to be passed out as a party favor. Lots of possibilities.

Now I just hope my girl will like it. Her biggest frustration with s’mores is when her marshmallow gets black from the fire. Hopefully these will be more up her alley.

      Ha! I have seen that pot for as long as I can remember. It was Grandma’s, and I just brought it home from Grandpa’s during our last trip. It’s actually the top half to an old double boiler. And I use it all the time! Scary, isn’t it????
